Have you checked for air trapped in your cooling system?

What coolant did you use?

How many miles on your odometer?

This sounds like air in the system. Watch the temperature gauge on the car status displays and see what it's doing. It should drop to around 190-195 F while under load and rise to 225-229 F with no load on the engine. If the load is steady it should be stable. If it varies by more than five degrees with a steady engine load you have air in the system.

They're a bit difficult to burp. Get the car up to temp and squeeze the radiator hoses to try to force air out of the system. Sometimes it works even better if you park the nose of the car uphill.
