The LT's 0-60 time suffers only because it has to be in 3rd to hit 60 MPH, but it pulls MUCH stronger through the gears due to their shorter ratios. I've been able to do it in 8-8.1 seconds...no race car, but not too bad for 138 HP.
That said, for long drives like you do every day, I'm sure you'd appreciate the 4-5 MPG extra from the Eco.
Weight difference is 87 lbs. The 200+ numbers come between an Eco MT and fully loaded AT LTZ.
