Okay so I’ve been seeing everywhere that spark plug gap should be .027-.028 but acdelco spark plugs come out the package at .023, are pre gapped and say to not re gap, so now I’m confused what gap should it actually be.

Make sure the plugs are the correct part number.
say to not re gap
There are reasons they say that, mainly too many people messing up the re-gapping.

As posted, 0.028 is were you want to be. (y)

Mine all came very close to .028, I personally don't think you'll have any issues at .023, that's splitting hairs.

I haven't really had to re-gap a spark plug since cars came with the copper ones, most of the platinums and iridiums seem to already be done.
My plugs were gapped, but were all off by about .001". I had to nudge them to exactly 0.028"

If you're running higher boost, you may want to consider a somewhat smaller gap. I run 28 thou' on my Mk6 GTI pushing 19psi, I'm considering going to 24.

It's worth noting that the gap will open up with time, simply from heat cycles and bending of the ground strap. With copper plugs, there's also erosion of the electrodes, but with newer iridium plugs, this isn't a problem - the plugs themselves should be good for 100k miles, easily.

ACDelco 41-153 are copper, -156 are iridium.
