I'm looking to replace the stock rims with an after market set and use the stock rims for snows. I'm just wanting to flip the stock tires (215/55R17) to the new rims. The rims I'm interested in are offered in +35 and +45 offset and are 17"x 7.5". I don't know much about offset and need some help. I want the wheels to sit flush with the top edge of the fenders. Which offset is the better choice? This is my daily driver. Thanks in advance!

The stock wheel is 17x7 with +44 mm offset. Look on the back of the wheel. If you widen the wheel to 7.5 inches, you will probably not widen the width of the tire much because you are sticking with your stock tires. Go with the +45 mm offset wheels.
